Ingredients
9oz(250gr)green beans, trimmed, cut into 2-3 inch/5-7.5 cm pieces
Soak the dried shrimp in hot water for 15 minutes to rehydrate them. Strain and discard the water before using them. The shrimp are pretty salty, you can rinse them with water if you prefer them less salty.
Blend spices and dried shrimp – In a food processor, add garlic, shallots, curly red chilis, and rehydrated dried shrimp. Pulse them a few times until roughly chopped. Don't blend them too long or they will turn into a mushy paste. You can also mince them with a knife if you don't have a food processor.
Cook the spices – In a big frying pan, heat oil on medium heat. Add the shrimp mixture and stir-fry for 2-3 minutes until golden brown.
Add green beans and seasonings – Add the green beans, hot water, chicken bouillon powder, granulated sugar, and oyster sauce. Stir-fry until the water has evaporated. Turn off the heat and serve.
