Sambal Terasi Goreng is one of the most popular sambal in Indonesia. It has a deliciously spicy and salty taste with a distinct umami flavor of the shrimp paste that will perk up any Indonesian food.
Fry spices – In a frying pan, heat oil on low-medium heat. Add shallots, garlic, and red chilis. Stir fry until fragrant. Add tomato and shrimp paste to the frying pan. Stir fry until the ingredients are wilted and soft, for about 5 minutes.
Cool – Turn off the heat and let them cool slighty before grinding.
Grind – Transfer to a mortar and pestle or food processor. Add palm sugar, salt, and chicken stock powder. Grind into a paste. You can make it chunky or smooth based on your preference. Adjust the seasoning and it is ready to serve.
Notes
You can add cooking oil to make the sambal thinner if preferred.
