Mash tapai – Remove the hard spine in the middle of the cassava tapai. Mash cassava tapai with a fork until smooth.
Make filling – Add all-purpose flour, granulated sugar, and condensed milk and mix until well incorporated. You can add more sugar if preferred.
Fill – Spread the cassava tapai mixture on 1 cracker and sandwich with another. Fill the gap on the sides. Repeat until the filling is finished.
Fry – In a large frying pan or skillet, heat enough oil for deep-frying on low-medium heat. When the oil is hot, drop 3-4 crackers at a time. Fry for about 1-2 minutes per side or until golden brown.
Cool – Remove the crackers from the oil and drain them on a paper towel to remove the excess oil. Then, place them on a baking rack to cool completely.
