Ingredients You Need

- Green mussels – I used green mussel meat without the shells. Other mussels or clams also work great in this recipe.
- Shallots – Shallots used in Southeast Asian cuisine tend to be small with a red exterior and white interior. Unlike western shallots which tend to be larger, Indonesian shallots are small and sweeter in flavor. The individual cloves resemble garlic cloves with pointed tapered ends.
- Garlic – For aromatic flavor and aroma.
- Chili peppers – This recipe uses curly red chilis and curly green chilis which have mild spicy level.
- Kaffir lime leaves – They are used to add fresh citrus flavors to the food.
- Sweet soy sauce – Or also known as sweet soy sauce. It is a sweetened aromatic soy sauce, originating in Indonesia. It has a thick, viscous syrupy consistency and dark color. It is made by combining soy sauce with palm sugar, which gives it a rich, molasses-like sweetness, and other herbs and spices for a layered flavor profile. If you can’t find any, you can use dark soy sauce and sugar.
- Oyster sauce – It adds a rich, savory, umami flavor.
How to Make Indonesian Stir Fried Green Mussels

- Stir fry shallots and garlic until fragrant. Add chili peppers and kaffir lime leaves. Stir fry for 1-2 minutes.
- Add green mussels and water.
- Season with sweet soy sauce, oyster sauce, salt, sugar, and chicken stock powder.
- Serve as a main dish or side dish along with a bowl of rice.
Storage
Mussels are best eaten immediately after being cooked. If you do have leftover mussels they can be stored in the fridge and consumed within 1-2 days of cooking.
Indonesian Stir Fried Green Mussels
Ingredients
- 9 oz (250 gr) green mussel meat (without shells)
- 3 tbsp vegetable oil
- 3 shallots, thinly sliced
- 2 cloves garlic, thinly sliced
- 3 curly red chilis, diagonally sliced
- 3 curly green chilis, diagonally sliced
- 6 kaffir lime leaves, 3 joined leaves, torn
- 3 tbsp hot water
- 2 tbsp sweet soy sauce
- 1 tbsp oyster sauce
- 1 tsp salt
- 1 1/2 tsp sugar
- 1/2 tsp chicken stock powder
Instructions
- Rinse and clean the green mussels. Set aside.
- Cook the spices – Heat oil on medium to high heat in a frying pan. Add shallots and garlic. Stir fry until fragrant. Add chilis and kaffir lime leaves. Stir fry for 1-2 minutes.
- Add mussels and hot water.
- Season with sweet soy sauce, oyster sauce, salt, sugar, and chicken stock powder. Mix until combined.
- Cook until the water evaporates and the mussels are cooked. Turn off the heat.
- Serve with rice and other side dishes.
